I was great seeing you this weekend:1 TBSP butter and 1 TBSP oil1-2 shallots, chopped, 4 garlic cloves1/2 tsp salt, 1/2 tsp pepper1/2 lb mushrooms, chopped1 pkg hot sausages1/2 cup white wine1 jar tomato sauce 1/3 cup parmesan cheeseSprinkle of heavy creamSaute shallots and garlic in oil and butter. Add mushrooms, salt, and pepper. Saute until softened. Squish sausages out of casings. Add to pan and smush until like ground beef in the pan. Add wine. Simmer until barely there. Add tomato sauce and parmesan cheese, and simmer. Just before serving, add a little cream and stir. Either stir into 1 lb pasta like rigatoni or put sauce on top of that pasta.
